A nice, very colorful dish from Vietnamese cuisine: mi quang noodles.
Noodles, as you all know, are soy spaghetti (usually) very common in Asia and this dish is typical of the central part of Vietnam and exactly from the area called Quang Nam from which the dish takes its name.
It is prepared by sautéing pork, eggs and shrimp. Then you add a little broth, some raw vegetable leaves (lettuce, basil, escarole), chopped peanuts and chili sauce. If you need a little salt, you can add fish sauce.
