Thai Cuisine: Sauteed Clams and Basil, the Recipe

Today I'm going to tell you about a typical Thai dish that is extremely simple to prepare and is eaten well with rice.

Ingredients

– Fresh clams, 1kg
– A bunch of Thai basil (which is different from the one we use for pesto, if you want to learn more here)
– Olive oil;
– 4 cloves of garlic;
– 10 fresh chillies;
– Spices: fish sauce, monosodium glutamate, pepper.

Preparation

First, soak the clams in water for a few hours, with salt, to remove any sand; then rinse them and remove the shells.
Then make a garlic and chili pepper pesto (with a mortar or blender).
Put a pan over medium heat, pour in the oil and add the chili pepper and garlic and fry until fragrant.
Now we have to raise the heat and add the clams and sauté for 2-3 minutes.
Now you can add the basil to the clams and sauté well for another couple of minutes.

Add a little bit of MSG and then turn off the heat, add a little pepper, taste again and add a little fish sauce.

That's it: the fried clams with basil are ready!

Nghêu xào rau húng quế (Spicy stir-fried clams with Thai basil)
Chuẩn bị:
– Nghêu tươi (hoặc đông lạnh) 1kg
– Rau húng quế của Thái (Châu Á)
– Tỏi 4 tép, ớt tươi: 10 trái.
– Gia vị: nước mắm, bột ngọt, tiêu.
Bước 1 
Nghêu ngâm nước vài giờ cho ra đất rồi rửa sạch, bóc vỏ
Bước 2 
Tỏi, ớt giã nhuyễn hoặc băm nhỏ
Bước 3 
Bật lửa vừa, đổ dầu vào chảo, cho ớt,tỏi vào chảo xào đến khi thơm
Bước 4 
Bật lửa lớn, đổ nghêu vào xào trong 2-3 phút
Bước 5 
Cho húng quế vào nghêu, đảo đều trong 2 phút
Bước 6 
Thêm ít mì chính rồi tắt bếp, cho thêm tí tiêu, nêm nếm lại rồi thêm một ít nước mắm cho phù hợp khẩu vị gia đình.
Thế là xong món nghêu xào rau húng quế, món này làm cực kì đơn giản và ăn hao cơm, và là một món ăn đặc trưng ở Thái Lan.

Many prickly pear plants grow along the wall beyond the Cappuccini in the Baia del Silenzio of my Sestri Levante and, when I bring my telephoto lens and they are in season, I always like to take a nice photo of these bright pink flowers.

Grapes from the vineyard of a Casa delle Viti in Sestri Levante.
Those who frequent this site (or at least know Sestri Levante) know that in my town there are three so-called vine houses.
They are called this because on the facades there are vine plants that climb up to the top floor of the buildings.
Last autumn, after a long time, I also managed to see the beautiful bunches of grapes that these vines produce and I decided to document them with a photo.
This is the house in via della Chiusa, probably the best known and most photographed one that I have already told you about (here).

And here is the church of the Saint, one of the largest religious buildings in Italy, in Padua.
A little Romanesque (the gabled facade), Gothic (the flying buttresses) and Byzantine (the dome) perfectly harmonized.
It houses the remains of one of the most venerated Saints in the Christian world.

Very often, walking through the small centers of the villages of Liguria, you often come across these alleys (which we call caruggi) that curve. Obviously they have this shape to surround the historic center and to protect its inhabitants with their walls.
This is the beautiful caruggio of Brugnato, a small village in the province of La Spezia that has become better known for the construction of the Outlet in its territory.

Today I am going to tell you about the recipe of Miss Sao, my friend, who comes from the south of Thailand and precisely near Phuket. Her dishes are very spicy but extremely tasty and delicious. I really like how she prepares Thai food.

Ingredients

– 100 grams young bamboo shoots, chopped;
– 170 grams thick pork belly (not the breakfast kind, so to speak), chopped;
– 4 lemongrass stalks, finely chopped;
– 12 chili peppers, finely chopped;
– 4 shallots: finely chopped;
– 5 garlic cloves: finely chopped;
– 1 small turmeric: finely chopped;
– Lemon leaves, core removed and chopped;
– Olive oil;
– Fish sauce, shrimp paste, monosodium glutamate, seasoning powder, sugar, pepper.

Preparation

First combine the shallot, garlic, lemongrass, chilli and turmeric in a blender (or if you have time and energy in a moratio) until you get a puree.
Put the oil in a saucepan and then add the blended mixture on top and fry it until it becomes golden and fragrant (this takes about 4-6 minutes).

Then continue to add 1/2 tablespoon of shrimp paste and mix evenly and then add the bacon, it takes about ten minutes until the meat is almost cooked, then add 1/2 teaspoon of MSG, 1/3 teaspoon of seasoning powder and mix some more.

Now add the bamboo shoots and stir by hand. Since there is water in the bamboo shoots, which is released during cooking, there is no need to add water. Stir-fry for 5-8 minutes, check if the seasoning is right, and add a little fish sauce and sugar (depending on your taste) to suit your home taste. At the same time, add chopped lemon leaves on top.

Continue to simmer for another 5 minutes to complete the dish. Pour into a dish and sprinkle with a pinch of pepper.

The dish is ready and this is how it should look:

Nguyên liệu
* 100 gram măng non (bamboo shoot), thái thành khúc
* 170 gram thịt ba chỉ (pork belly), thái thành khúc
* 4 nhánh sả, thái nhỏ
* 12 quả ớt, thái nhỏ
* 4 củ hành tím nhỏ: thái nhỏ
* 5 củ tỏi: thái nhỏ
* 1 củ nghệ nhỏ: thái nhỏ
* Lá chanh, bỏ chỉ, thái sợi.
* Nước mắm, mắm tôm (shrimp paste), bột ngọt, bột nêm, đường, hạt tiêu.
Cách làm
Đầu tiên, cho toàn bộ hành, tỏi, sả, ớt, nghệ đã thái nhỏ vào xay nhuyễn.

Cho dầu ăn vào xoong, sau đó cho hỗn hợp đã xay nhuyễn ở trên vào xào đều, cho vàng và thơm trong khoảng 4-6 phút.

Sau đó tiếp tục cho 1/2 muỗng canh mắm tôm vào xào đều và cho tiếp thịt ba chỉ vào, xào thịt ba chì trong 7 phút cho thịt gần chín thì cho vào 1/2 muỗng cà phê bột ngọt, 1/3 muỗng bột nêm (seasoning). Đảo thêm tí nữa, rồi tiếp tục cho măng đã chuẩn bị phía trên vào. Xào đều tay. Vì trong măng có nước nên không cần cho nước vào. Xào trong 5-8 phút, kiểm tra gia vị lại đã vừa ăn hay chưa, rồi nêm thêm một ít nước mắm và đường(tuỳ vào gia đình bạn) cho phù hợp với khẩu vị gia đình bạn. Đồng thời cho lá chanh đã thái nhỏ ở trên.
Tiếp tục để lửa riu riu trong 5 phút nữa là hoàn thành món ăn. Cho ra đĩa và rắc thêm tiêu. Cô Sao- bạn tôi, là người sống ở miền nam Thái Lan phuket. Các món ăn của cô rất là cay nhưng cực kì đậm vị và ngon miệng. Tôi rất thích đồ ăn Thái của cô chuẩn bị.
