Some time ago I went to lunch at the restaurant pizzeria I Due Gabbiani Beach in Riva Trigoso and I enjoyed these excellent paccheri with baby octopus sauce.
They were really tasty and I would like to write you a recipe so you can try making them at home too.
Paccheri with baby octopus sauce is a dish that contains all the flavors of the sea, perfect for those who love Mediterranean cuisine. This recipe, simple but full of flavor, is ideal for a special dinner or to surprise your guests with a touch of elegance.

Ingredients:

– 400 g of paccheri;
– 500 g of fresh cuttlefish;
– 200 g of peeled tomatoes;
– 2 cloves of garlic;
– 1 chili pepper (optional);
– 1 glass of dry white wine;
– Extra virgin olive oil to taste;
– Salt and pepper to taste;
– Chopped fresh parsley.

Preparation:

Start by thoroughly cleaning the cuttlefish under running water. Remove the beak and eyes, then cut them into pieces.
In a large pan, heat a drizzle of extra virgin olive oil and add the crushed garlic cloves and the chili pepper. Leave to fry for a few minutes until the garlic is golden.
Add the cuttlefish to the pan and brown them over a high heat for a few minutes. Pour in the white wine and let the alcohol evaporate.
Add the peeled tomatoes crushed with a fork, season with salt and pepper, and leave to cook over a low heat for about 30 minutes, stirring occasionally.
In the meantime, cook the paccheri in plenty of salted water following the cooking times indicated on the package. Drain them al dente.
Add the paccheri to the cuttlefish sauce and mix well to blend the flavors. Leave to flavour for a couple of minutes on low heat.
Serve the paccheri with octopus sauce piping hot, garnished with a generous sprinkling of chopped fresh parsley.
