Pastry cream (or custard or commonly abbreviated to cream) is a preparation based on egg yolk, sugar, milk and flour, used in many confectionery products. Other thickeners such as corn starch or rice starch can be used instead of flour. It can be served as a dessert or used as a garnish or filling for cakes, sponge cakes, cannoli, cream puffs and various other pastry products.
