Grilled fillet on the ship.
One of my favorite meat dishes: grilled fillet. I have to say that there was a tad too much garlic, I think due to the marinade, but still not bad.

The fillet is a type of cut of meat, mainly beef but also pork or other animals (e.g. game such as hare or deer), coming from the lumbar area of ​​the animal. By analogy, the term “fillet” is also used with reference to the more tender parts of the meat of chicken or other edible birds, namely those around the “keel” or sternal crest (protruding cartilage) of the breast or those of the boneless thigh (“thigh fillet”).

Alcuni filetti di sogliola alla mugnaia

Alcuni filetti di sogliola alla mugnaia.
Un pesce molto buono e potrei dire quasi il mio preferito.
Cucinato alla mugnaia ovvero impanato in farina e cotto in olio (e un po’ di burro se volete renderlo un filino più gustoso).
Pulito e sfilettato dopo la cottura.
Una spremutina di limone e via.
L’unica cosa negativa è che è un pesce abbastanza caro e com una sogliola media si mangia proprio pochino.
Serve un bel contorno (che di solito per me sono patate bollite con sale ed olio).

Con il nome comune sogliola si indicano alcune specie di pesci d’acqua salata appartenenti alla famiglia dei soleidi e dei Pleuronectidi. Sono pesci la cui evoluzione li ha portati alla postura sdraiata su un fianco, con uno dei due occhi che si è spostato a fianco dell’altro, sul lato rivolto verso la superficie dell’acqua. Anche la colorazione ha seguito quest’evoluzione: il lato rivolto verso il fondo è bianco, quello verso l’alto è bruno, marezzato, mimetico e spesso camaleontico: le sogliole riescono infatti a cambiare colore per imitare l’ambiente circostante grazie ai cromatofori, cellule con pigmenti colorati dell’epidermide.

Un buon filettino di vitello, cucinato alla griglia, e con un po’ di riso come contorno.
Un pranzo da re estremamente semplice da preparare ma decisamente molto soddisfacente.
