Grilled octopus with fried rice, the recipe.
I have tasted grilled octopus several times (in Spain, Greece and Italy) and I like it very much. Using all the experience and some advice online I found the perfect recipe for my tastes that I describe here. The dish is accompanied by fried rice prepared by my wife who I will ask to write the preparation.

Ingredients

– a nice octopus (fresh or frozen);
– half an onion;

For the marinade:
– oil;
– lemon;
– garlic;
– chili pepper;
– white wine;
– soy sauce;
– salt;
– pepper;
– sweet paprika.

Preparation

First you need to boil the octopus: in a nice pot full of water add half an onion (and some other flavors if you like) and boil for about half an hour for every half a kilogram of weight.
Once the octopus is cooked (you can test its softness with a fork and possibly let it cook a little longer) remove it from the water and let it cool.
When it is lukewarm we cut it into smaller pieces for the marinade, leaving the tentacles whole.
Now, in a container (I recently bought some plastic bags with an airtight seal, very useful for marinades), add the ingredients for the marinade (all of them) and the chicken.
I leave them to infuse for a couple of hours outside the fridge to let the flavors absorb well.

Now all you need is a nice grill (or if you're lucky, a barbecue), bring it to temperature and place the octopus on it for a few minutes just to make it crispy and little more.

We plate with fried rice (or any other side dish you like) and we are ready to enjoy a dish with excellent flavor!

It is considered one of the most intelligent invertebrates; for example, it has been demonstrated that the common octopus has the ability to learn if subjected to association learning tests and by observing others of its species, an ability that had only been demonstrated in some mammals. This last evidence is quite surprising, since, being the octopus a strongly solitary animal, such behavior, typical of animals with social relationships, would seem inexplicable.

This species is of great importance for commercial fishing in the Mediterranean and southern Atlantic Europe. It is caught mainly with the surrounding net called ciànciolo in which the schools are attracted with the help of powerful lights. Sometimes drift nets (menaide) are used.

An excellent tomahawk steak enjoyed on board.
For a few years now, on the Costa Crociere ships, you can find an excellent steakhouse with a truly exceptional quality and variety of meat.
Every now and then I also take advantage of this excellent restaurant!
This was a "huge" tomahawk steak that I ate on the (now) ex Costa Firenze!

When we talk about tomahawk steak, we are talking about a large cut of beef. It is a rib eye steak, with the cut that goes from the loin towards the front of the animal, including the meat that is found from the fifth to the first dorsal vertebra.

A nice grilled fillet cooked at home.
Although in restaurants they almost always have the possibility of cooking at higher and optimal temperatures to brown the surface of the meat, even at home the result can be very good.
This is a nice "filettazzo" very demanding and succulent.
As you can see I took the photos after tasting it... it was too mouth-watering!

Grilled fish in Vietnam.
A mix of Vietnamese cuisine with Japanese style preparation, with the grill at the table.
To tell the truth, octopus is very popular in Vietnam but self-service preparation is something that comes from Japan (or perhaps from Korea where I had already seen it several years ago).
In the middle of the table there is a gas grill; they light it for you and you or the waiter puts what you ordered on it.
Fish or meat, whatever.
Then, I don't know if it was because the place wasn't full, the waitress came by every now and then to check on the cooking.
A little hard but still appreciable for the taste. Slightly spicy, everything is in Vietnam, but acceptable even for me who am not a regular fan and consumer. Then, if you want, they always bring more to add as much as you want!

Tappa obbligata quando con la nave sei nella capitale uruguaiana e’ questo mercato coperto.
A dire la verita’ ormai non e’ piu’ un vero mercato ma si e’ trasformato in un luogo pieno di ristoranti dove fanno la carne asada (alla griglia o parilla).
A me, che piace tantissimo la carne, sembra di entrare in paradiso… Questa era la seconda volta che ci sono andato in vita mia.
I prezzi sono giusti e la qualita’ molto alta!
E si trova proprio a duecento metri dal porto, cosa volere di piu’?

Grilled Uruguayan fillet steak in Montevideo.
A few weeks ago, I was on the Costa Fascinosa with cruises that left from Brazil and, every now and then, arrived in Montevideo, Uruguay.
In the capital, really close to the port, there is the Mercado: a former covered market that today hosts about ten grilled meat restaurants.
This is very close to what I consider paradise!
I had already been there a few years ago and I couldn't miss it.
As you can see from the photo, this was my lunch: a nice grilled fillet steak with chips.
In the next few days, and months, I will post more photos of other dishes ordered by my colleagues; all absolutely delicious and reasonably priced!

Pork ribs are also very typical in Vietnam. These were obviously grilled.
They were not bad and, luckily, I managed to cook them with a little spicy sauce.
The view was not far behind: all the ribs were covered in seeds and tamarind sauce.

Polpo alla vietnamita-giapponese.
Un mix di cucina vietnamita con la preparazione giapponese style, con il grill al tavolo.
A dire la verità il polpo è molto usato in Vietnam ma la preparazione self-service è una cosa proveniente dal Giappone (o forse dalla Korea dove l’avevo già visto diversi anni fa).
Nel mezzo del tavolo c’è un braciere a gas; te lo accendono e tu o il cameriere vi pone quello che hai ordinato.
Pesce o cerne che sia.
Poi, non so se era perché il locale non era pieno, la cameriera passava di tanto in tanto per controllare la cottura.
Un pochino duretto ma comunque apprezzabile per il gusto. Leggermente piccante, tutto lo è in Vietnam, ma accettabile anche per me che non ne sono abituale estimatore e consumatore. Poi, se volete, ne portano sempre da aggiungere a volontà!
