Unfortunately the pesto was a little too liquid and I had to add a little too much grated cheese.

Perhaps the title may seem a little exaggerated but in my opinion this dish has something artistic about it.
One of the most classic dishes of Liguria, one of the most well-known (and imitated) in the world.
In this very soft shot, the freshly drained spaghetti are wrapped (cold, mind you) in this green sauce that will cover the surfaces in a few minutes.

In questo caso e’ stato usato per condire un tipo di pasta tipico svizzero, i knopfli (in tedesco Spätzle), che solitamente vengono solamente bolliti ed usati come contorno di altri piatti.
I knopfli sono molto simili alle trofie (o trofiette di Recco) per cui l’accoppiata rende molto.

My favorite pasta sauce is definitely pesto alla genovese. When it is combined with trenette it is the best (come on, it is also excellent with spaghetti, fusilli, trofie, gnocchi... a bit with all types of pasta).
Obviously fresh homemade pesto, I think there are few people in Liguria who buy it already made, 5 minutes to prepare the sauce while the water boils (ten with washing the basil and separating the stems from the leaves - a trick to make it better) and there you have it.
A pleasure for the eyes but above all for the palate.

It's not exactly the type of pasta that is easily found paired with pesto but these splendid knopfli (in German Spätzle, a type of Swiss pasta that is very similar to Genoese trofie) made at the moment are truly exquisite.
You will hardly be able to eat them if not at my house!
