Candied fruit in Spain

Frutta candita in Spagna

Candied fruit in Spain.
Candied fruit, a way to preserve fruit and make it sweeter.
Some time ago now I took this photo in one of the many covered markets in Palma de Mallorca.
In particular in the photo of the candied oranges on the left in slices (rounds) and on the right in large segments.

I really like candied citrus fruits, what about you?

In the candying process, the water content of the fruit is reduced by osmosis and the sugar content is gradually increased to more than 70%. The nutritional qualities of the raw material used are almost completely lost, although some vitamins are retained. The preservation of the aromas depends on the type of procedure and the skill of the confectioner.

A succulent cut blood orange

Arancia rossa tagliata

A succulent cut blood orange.
It is one of the most common fruits in the world, by now, but in Italy there are still some excellent ones.
Thanks to the forced stay-at-home period a few months ago, I indulged in macro photography.
In these photos, especially in the second one, you can clearly see this orange that I cut (to make a fresh juice).
The thing that I like most in the photo, of this beautiful cut blood orange and that I want to share with you, are the small orange cells right in the outermost part of the peel that I believe contain the scented essential oils of this splendid fruit.

Homemade garlic and oil pasta

Pasta aglio e olio

Pasta aglio e olio prepared at home.
This type of pasta, among the simplest to prepare, has recently become one of my favorites.
Even if the most classic is with the addition of chili pepper, I prefer it like this, not spicy (even if I can stand it a little "hot"), also because I don't have chili peppers at home...
I must admit, and the true lovers of this preparation will hate me, that I added a little grated cheese at the end, but I avoided putting it in the photo.
Other ingredients that are normally added are parsley and anchovy, but I don't like it and, at the moment, I don't have it at home!

Do you like it? Spicy or not? With grated cheese or not?
