The tasty mimosa cake, the recipe.
The mimosa cake is a traditional Italian dessert, often prepared on the occasion of Women's Day, March 8. Its name comes from the similarity of its ingredients with the yellow flowers of the mimosa.

Assembly:
Once the sponge cake has cooled, divide it into three parts: one will be the base of the cake, one you must crumble and mix with the custard and the last one you cut into cubes for decoration.

Then: mix the crumbled sponge cake with some of the custard until you get a soft but compact consistency.
Pour a layer of custard on the base of the sponge cake in a springform pan or on a serving dish.
Cover with an even layer of crumbled sponge cake and continue alternating layers until you run out of ingredients, making sure that the last layer is of crumbled sponge cake.
Decorate the top with the sponge cubes and sprinkle with icing sugar.
