Some excellent fish ravioli tasted in Lavagna.
Some time ago, being in Lavagna at lunchtime with my wife, we decided to stop to eat in one of the various trattorias and taverns in the center of the Tigullian town.
The choice was the Trattoria U Pescou where I ordered this plate of excellent fish ravioli with fish sauce.

The ravioli with ragù from the trattoria La Tagliola in Carpenissone.
Some time ago, at the invitation of several friends, I went to taste (or rather to re-taste after many years) the ravioli from the trattoria La Tagliola in Carpenissone, in the municipality of San Colombano Certenoli.
I must say that they were very good and tasty! Unfortunately my lunch was disturbed by some personal problems that did not allow me to fully appreciate the main course (the ravioli). The trattoria therefore does not place itself on the podium of my favorites but perhaps my judgment will need to be reformulated on another visit!

Ravioli al ragù from the Albergo Ristorante la Veranda in Tavarone.
A few weeks ago, at the invitation of a visitor, I went to taste the ravioli al ragù (in Genoese i raieu au tuccu) in Tavarone, a small town in Val di Vara (in the hinterland of Sestri Levante and Casarza Ligure).
I discovered some really good ravioli, so much so that I put them in third place in my special ravioli ranking!
Absolutely not to be missed!
Just a tip: book because times and places are limited!

The best ravioli (raieu) with ragú (au tuccu) in Eastern Liguria.

For some time now I have been trying to keep track and rank what I think are the best ravioli with ragù (the real one is called tuccu from the Genoese tocco, a piece, from the piece of meat cooked for a long time that we use to make the ragù) of the trattorias in my area. By “my area” I mean the eastern part of the Province of Genoa and the relative hinterland (since I live in Sestri Levante).
I'll say it right away: tocco is not always used as a condiment, sometimes it is the classic but equally tasty meat ragù.
Mine is not intended to be a competition but just a way to let you all know the best places, in my opinion, to go and eat this excellent dish.
I hope no one feels offended (de gustibus non disputandis est) also because, wherever I have been, I have come away satisfied!

Obviously these are the places I have visited and for this reason I ask you to suggest new ones. I promise I will try them when I am home and then I will write a post about them.

This pasta, called trofiette (or trofie or trofiette di Recco), is one of the most classic to accompany Genoese pesto.
As you can see from the photo, the pesto in question is, as they say, “accomodato” with boiled potatoes and green beans.

The shape of the pasta is given by the peculiar curled character in the shape of a carpenter's shavings, called risso da banché. The shape and size, rather small, of a trofie are important factors for its organoleptic qualities. Trofie have an unmistakable shape, what is locally called "intursoeia" is the characteristic twisting of the central part that ends with two tapered appendages, the shape can be compared to that of the corkscrew spiral.

Più che la foto, che a dire il vero non è eccezionale, è il dolce che era eccezionale: una cosa mai assaggiata prima dal gusto insolito (per me) e accattivante.
Una panna cotta aromatizzata al basilico arricchita da scaglie grosse di cioccolato fondente.
Da provare se dovete scegliere!

Una delizia per il palato: ravioli con ripieno di pesce conditi con sugo di pesce guastati a Sestri Levante.
Una specialità di questa trattoria (osteria) sestrese.
Devo ammettere, ma non è una novità per me, che erano veramente buoni e ve li consiglio se passate per la nostra cittadina.

Difficile è, anche occupandosi solo della storia del raviolo occidentale, stabilire una data precisa della sua comparsa nel Nord Italia, sebbene sia sicuro che emergano tracce in materia già in Giovanni Boccaccio nel Decameron (“…niuna altra cosa facevano che far maccheroni e raviuoli e cuocergli…”), quando era già ben impiantato nella società medievale del tempo. Possiamo ipotizzare la sua apparizione intorno al 1100.

I had never been there before but I have to say that I didn't found it not bad at all.
This is the dish that I consider the main one: ravioli with meat sauce.
