To tell the truth, I don't even remember where I ate this excellent pasta dish. I wrote that it is prepared with lobster sauce but it could very well be lobster.

Since it is my wife's favorite condiment, in almost all the restaurants we go to eat, we order a plate of pasta with clams.
In this case, not the classic spaghetti but some equally good trenette!

There are many photos of pesto on my blog because it is one of my favorite dishes and it is typical of my region.
To the pesto, to make it even tastier, we also add a few pieces of boiled potatoes (we could also add green beans but I don't like them very much).

Le trenette al pesto.
Con il pesto alla genovese, quello preparato con basilico, aglio, pinoli, parmigiano, sale e olio d’oliva, si può condire praticamente ogni tipo di pasta.
Alcuni tipi però sono più classici e forse si fanno accompagnare meglio da questa salsa.
E’ il caso delle trenette che sono veramente uno dei classici al pesto.

Bluish in color, with yellow spots on the back and a light belly, it has two pairs of antennae, one long and one short, and 8 locomotory legs, in addition to 2 chelated, one larger and one smaller, to better perform different tasks. The carapace is smooth and hollow, it has two spines, located near the eyes. It can reach half a meter in length, but common specimens measure from 30 to 40 cm.

Trenette with fresh pesto.
My favorite pasta sauce is definitely pesto alla genovese. When it is combined with trenette it is the best (come on, it is also excellent with spaghetti, fusilli, trofie, gnocchi... a bit with all types of pasta).
Obviously fresh homemade pesto, I think there are few people in Liguria who buy it already made, 5 minutes to prepare the sauce while the water boils (ten with washing the basil and separating the stems from the leaves - a trick to make it better) and there you have it.
A pleasure for the eyes but above all for the palate.

Trenette al pesto con parmesan grated on top is definitely one of the delights of Liguria.
Being one of my favorite dishes you will find it dozens of other times on this site but I insist on adding photos of it when I have the chance.

I refer you back, here, to the short but clear recipe written for me by the Chef Loris.

Pesto (pronounced in Ligurian: /’pestu/) is a traditional condiment typical of Liguria. With the name pesto alla genovese, it is included among the traditional Ligurian agri-food products (PAT).
Its basic ingredient is basil (Ocimum basilicum), and more specifically Genoese Basil.
Pesto is obtained by crushing (mixing under pressure) basil with salt, pine nuts and garlic, all seasoned with parmesan, fiore sardo and extra virgin olive oil. It is therefore a raw sauce, or a compound in which the ingredients are mixed cold, not cooked. For this characteristic the ingredients do not lose their original organoleptic characteristics.
