Ravioli with Meat Sauce at Trattoria Pagliettini in Comeglio.
Some traditional dishes can tell the story of a region better than words, and for me, ravioli with meat sauce is certainly one of them. In this photograph, I am sharing a plate of ravioli with ragù that I enjoyed at Trattoria Pagliettini, in Comeglio, a small locality in the hills above Moneglia, in the Province of Genoa, Liguria, Italy.
Trattoria Pagliettini specialises in traditional Ligurian cuisine and is located inland from Moneglia, away from the seafront and the busy atmosphere of the coastal resort. Reaching the restaurant means heading uphill into the countryside, where the landscape offers a quieter view of the eastern Ligurian Riviera. This area has its own culinary identity, shaped by local traditions and dishes that have long been part of everyday life in the hills around the coast.
The first thing that catches my eye in this photograph is the generous tomato and meat sauce covering the ravioli. The pasta and ragù come together in a familiar, inviting combination that needs no elaborate presentation. This is one of the things I appreciate most about traditional Italian food: recipes that are rooted in local habits, recognisable flavours and dishes that focus on the pleasure of eating well. Ravioli with meat sauce is a classic choice alongside other Ligurian specialities, including pansoti served with walnut sauce and tagliatelle with pesto.
The history of Trattoria Pagliettini is connected with the local area’s food traditions. According to the restaurant’s own website, the establishment was already operating as a small inn in the years following the Second World War, serving simple fare such as bread, salami and wine. Over time, it developed into a restaurant known for its traditional Ligurian cooking. This evolution reflects the role that small country inns have played in the region, offering straightforward food and a welcoming place to gather.
I took this photograph myself during my meal because I wanted to preserve the memory of a traditional dish worth sharing. When I photograph food, I like to capture what is actually served at the table: the colours, the texture of the pasta and the sauce that gives the dish its character. A photograph can bring back the atmosphere of a meal and inspire others to discover the places where local cooking continues to be appreciated.
Take a look at my article, where I share my personal ranking of the restaurants serving the best ravioli with meat sauce in the eastern part of the Province of Genoa.
